I had seen several recipes for egg muffins so I decided to give it a try. They are so quick and easy and you can make up a big bunch at a time and then freeze them if you want. You just pull it out and heat it up for a simple on-the-go meal for only around 80 calories each and very low carb (see nutrition information below).
The great thing about making these muffins is that you can put anything you want in them. For mine I used 6 eggs, 1 cup of egg whites, reduced fat spicy pork sausage, reduced fat cheese, and spinach.
Start by cooking the meat and chopping the vegatables.
Then mix all the ingredients together and season to taste.
