Spinach Berry Banana Smoothie


Recently I started making smoothies.  They are a quick and easy meal and a great way for me to get in more fruit and vegetables.  You seriously cannot even taste the spinach, it's so good!  There are so many variations to this recipe that you can do, but this is the way that I like it the best.  I like using frozen fruit so that you don't have to use ice.

Here is the recipe.  It makes 1 smoothie.

2 cups of fresh spinach
1 cup frozen berry mix
1/2 banana
1 cup of milk
1/4 cup of nonfat plain greek yogurt
1 packet of splenda

Sometimes I add a scoop of protein powder if I'm trying to get more protein in.

Blend all ingredients together and enjoy!





I like to put all the ingredients in individual baggies and freeze.  That way it's quicker to fix and the smoothie turns out colder.

Blogger Meet Up


Last night I was able to meet up with several of my blogger friends that have had Lap-Band surgery!  We had such and good time and could have stayed there chatting all night!  Vicky was in town from New Orleans for work training, so we got a group of us together that lived in the DFW area.

I've had the pleasure of meeting Beth and Brenda before, but it was my first time to meet Clara and Vicky.  It's so cool how you can feel like you're instant friends with people that you only know from the internet and just met, but it really felt that way.  I'm so thankful for all the people I have met through blogging and the friendships that I have developed!

Brenda and Vicky have so much in common!  And they both have lost 150 pounds and look fabulous!!!

Clara and I had already decided that we would be roommates in Chicago, but we hadn't had the chance to meet yet.  It was so fun talking and getting to know each other and I know we'll have a great time in Chicago!  Speaking of Chicago, I got my plane tickets purchased (I'm on the same flights with Beth and Debi) and we got the reservation for our room made.  Yay!!  Can't wait to meet many more of you there!

Catching Up






Thank you all so much for your thoughts and prayers about my cousin.  It's been hard because it happened so suddenly, but I know that God is in control and there is a reason for everything.  I find myself missing her because of the most random things.  She commented on almost everything I posted on Facebook and whenever I post something it makes me sad that she won't comment on it.  It's getting easier now that I've had time to process it and accept that she's really gone, but I still miss her all the time and there is a huge hole in my life and in our family.  We had the funeral service on Friday and my dad did such a great job with it!  It was really a celebration of her life and it was so personal and loving.  We all got to say words that described her and it meant so much to everyone. I'm so thankful for all the people in my life and it makes me want to tell them even more because life is so short!

One of my best friends Holly stayed with me the weekend before I left for vacation because we were hosting a baby shower for our friend Michelle.  The morning of the shower, she got a call from her husband and found out that her sister-in-law Casey had died in a tragic accident.  She was only 22 and was attending med school at the University of Oklahoma.  On Sunday morning she was climbing up a fire escape to get to her dorm room and slipped and fell.  The campus police found her and were unable to revive her.  It was shocking and so very sad!  It's so hard to understand why these things happen.  She had her whole life in front of her!  I was able to spend time with Casey and her family several times when I went to Oklahoma to visit Holly and she was an amazing person.  My roommates were kind enough to offer to drive Holly back to Oklahoma so she didn't have to drive back after getting such hard news and I was able to stay home and get things setup for the shower.  It's still so hard to believe that Casey is gone.  Please keep her family in your thoughts and prayers as well. The baby shower for Michelle went really good despite the circumstances.  Thanks to all of Holly's hard work before and thanks to Aven and Mary who came over early to help since Holly had to leave, we were able to pull it off.  Michelle's baby is due any day now and I'm excited to meet him or her!


I had an amazing vacation!  There were so many things that I was able to see and do in such a short amount of time!  And one of the best parts was getting to meet Vanessa in Montauk!  I'm just now working on going through all my pictures and getting them uploaded, so I will do a blog post about it soon. 

So needless to say the last couple of weeks have been a roller coaster of emotions!  It's been filled with grief and hard times, but also enjoying seeing and doing so many things in the Northeast.

Things have been good on the weight loss front.  When I got back from vacation I expected to either gain or stay the same, but I actually lost 2 pounds.  Yay!  I guess it was from all that walking around New York City that I did.   It's been really hard to get back into my eating and workout routine since I've been back.  With everything that happened with my cousin last week I didn't workout or eat good at all.  This week I'm getting back into the swing of things, but it's been harder that I thought it would be.  


I'm getting caught up on reading all of your blogs.  I'm so behind!  I like to comment on people's posts as much as I can, but I'm just trying to get caught up at this point.  So please forgive me if I don't comment like I normally would, but know that I am reading them!  If you are following me and I'm not following you back, please let me know!

Sophie Grace




I've been attending childbirth classes with my sister, Alicia.  Her baby (Sophie Grace) is due August 7th and I will be in the delivery room with her.  I'm so excited for Sophie to get here!!!  My little sister, Annalie is coming home from Honduras on July 29th and I can't wait to see her and have her here when Sophie is born!
I bought plane tickets to visit one of my best friends, Angela in Naples, Florida next month!  I am so excited to get to spend time with her and enjoy being close to the beach!  I started to realize that if I didn't go see her this month, I wouldn't have another chance until probably March of next year!  My schedule is crazy the rest of the year.  Florida in July, new baby in August, Chicago in September, New Orleans in October, and then the Holidays.  I'm excited for all the fun times to come!

I decided to have surgery for my fibroids in January.  That will give me time to lose as much weight as possible and hopefully be at or really close to my goal weight (40 more pounds to go). Thankfully I haven't really been having any symptoms and I feel good about waiting and just setting the date and working as hard as I can until that date.  

Some people have asked how the online dating is going...it's not.  I've only had 2 guys reach out to me on eHarmony and neither one of those have worked out.  I haven't initatied conversation with anyone, but I honestly would rather him reach out to me.  Is that really old-fashioned?  I mean I can do it, but part of me wants to be pursued and not have to be the one to initiate.  But really I have had zero time to worry about this right now.  Maybe in a week or two I'll get back into it, but it's kind of the last thing on my mind at the moment.  We'll see...

One of my roommates told me last Monday that she is moving out.  She is going to move closer to her work because she has a really long commute.  We are going to miss her so much and I wish she wasn't moving out, but I know it's so much better for her.  So that means I have to try and find a new roommate.  I'm praying to be able to find another roommate that will be a good living situation for us!

That's all I can think of right now.  These last several weeks have been a blur, but things seem to be settling down more now and hopefully I can get back into the habit of blogging.  Hope everyone is doing great and making healthy choices!

I'll Miss You Debbie!


It's Monday morning and I had just gotten back from vacation (I'll post about that soon) at midnight the night before.  I had been talking to my roommate and just started to go through my work emails when I get a text from my mom. She said that my cousin Debbie (3rd from the left in the picture above) didn't show up for work on Monday morning and that when her son went to go check on her, that they discovered that she had died sometime on Sunday night/Monday morning.  For a few moments my world stopped.  I was having a hard time catching my breath and I just couldn't believe that it was real.  How could this have happened?  She wasn't sick and there was no explanation for why she died.  How could she be gone, just like that?  Two days later, it still doesn't seem real to me.   I just talked to her on Sunday.  She was telling me how my vacation was like a dream trip for her and she felt like I took her on vacation with me by all the pictures I posted on Facebook.  It's just so hard to believe and to understand why.

Debbie was the rock in our family.  She planned and organized so many of our events, including our cousins nights that we probably wouldn't have started if it wasn't for her.  Debbie always wanted to know what was going on in my life.  She always read my blog and cared about everything that was going on with me.  We would always send emails back and forth just talking about life and our favorite TV shows.  Most of the pictures we have of our family are because of her taking pictures every time we would get together.

I can't imagine what our family get-togethers will be like without her.  It's so hard to imagine her not being there to talk to or play Texas 42 with.  Our favorite show is Big Brother and we would watch it and talk about it together every day.  We were already talking about the one starting this summer and how much we were looking forward to it.  I don't know how I'm going to watch it without her.



So many things that will change and be so hard without her!  I don't understand why she left us so soon, but I know that she is in a better place and I'll see her again someday!

Please pray for our family during this difficult time and especially for her son Brandon and his wife Karen.  The funeral is going to be on Friday morning and my dad will be doing the service.

I love you Debbie and I will miss you so much!!!

MIA



Sorry I've been MIA!  I've been a horrible blogger the last several weeks!  Between my crazy busy schedule, work and planning my trip I have had absolutely no time to write blog posts or even read other blogs!

Just to give you an idea, last weekend I had 4 pool parties, dinner with friends, an afternoon at the lake and a photography class.  It was insane, but so much fun.  I've been working so late every night this week just to try and keep up.

Then this weekend, my friend Holly is coming in town to stay the weekend with me in a few hours and we have plans all weekend including throwing a baby shower at my house for our friend Michelle.  Then I leave for the airport as soon as the shower is over on Sunday to head to NYC.

Ahhh...I have so much to do and so little time!  But I wanted to at least come on here and give a quick update.  I'm trying to get caught up with reading your blogs, so please forgive me if I don't comment like I normally do.

My eating has been okay the last several weeks.  Not great, but not horrible either (thanks in huge part to the lap-band)!  I really need to buckle down and get back to basics, but that's going to have to wait one more week.

My 1 year bandiversary was on Sunday.  I started writing a post about that, but didn't get to finish or publish it.  So be on the lookout for that soon.

I'm so excited about my NYC/New England trip in 2 days!  I have so many fun things planned so I'll try and post some blogs and pictures of all of that.
